The Best Simple Potato Soup
The delicious combination of potato and scallions in this hearty soup results in the perfect “comfort food” dish. And although this recipe tastes rich, it actually is lower in calories than most potato soup recipes! Enjoy the comforting flavors and textures of a baked potato-in the form of soup.
Ingredients
- 4 scallions, cleaned and thinly sliced
- 2 tablespoons olive oil
- 4 cloves garlic, chopped
- 1 teaspoon salt
- 6 cups of vegetable broth
- 1 pound of red potatoes, peeled and cubed
- 2 pounds of Russet potatoes, peeled and cubed
- 1/2 teaspoon ground pepper
Directions
- 1. Heat olive oil in a large pot. Cook scallions for 5-6 minutes, stirring occasionally. Stir in garlic and salt.
- 2. Reduce heat to low and cook for four minutes, stirring occasionally.
- 3. Add broth, red potatoes, and russet potatoes. Raise heat to high and bring mixture to a simmer. Stir once, then cover and reduce to medium heat.
- 4. Cook soup for 25-30 minutes, until soup thickens. Stir in pepper. Serve and enjoy!
