Simple Spaghetti with Fresh Tomato and Basil

 
 
 

This simple, classic Italian dish is a hit no matter what time of year!

Ingredients:

  • 2 cloves of garlic

  • container of cherry tomatoes

  • 3 basil leaves

  • 3 teaspoons of olive oil

  • One box of spaghetti

  • ½ cup of vegetable broth

  • ½ cup of parmesan cheese

  • ½ cup of ricotta cheese

  • salt + pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil.

  2. Peel and mince garlic.

  3. Cut cherry tomatoes in half. Combine 1 teaspoon of olive oil, salt, and pepper.

  4. Remove basil leaves from stem, chop leaves.

  5. Add spaghetti to boiling water and cook according to spaghetti package directions.

  6. Drain spaghetti.

  7. Heat two teaspoons of olive oil in a pan. Add garlic and stir/cook for two minutes. Season with salt and pepper.

  8. Add vegetable broth, ½ cup of water, and bring mixture to a simmer.

  9. Stir in cherry tomatoes into sauce. Add ¼ cup of parmesan cheese, mix to combine.

  10. Add basil and season with salt and pepper, turn off flame.

  11. Prepare dish by putting spaghetti on dish, top with parmesan cheese (and optionally, with ricotta).
