Simple Arugula Cranberry Salad with Almonds

 
 
 

This arugula salad, with sweet dried cranberries, red onions, and sliced almonds is a beautiful addition to your holiday table! It is colorful, flavorful, and best of all, low in calories, and high in nutrients!

Ingredients:

  • Bag of fresh baby arugula

  • 1 medium red onion, sliced thin

  • ½ cup dried cranberries

  • ½ slivered almonds

Vinaigrette

  • ½ cup of olive oil

  • 1 tablespoon of fresh lemon juice

  • 1 teaspoon of salt

  • 1 teaspoon black pepper

Instructions:

  1. Make vinaigrette by combining olive oil, lemon juice, salt, and pepper in a medium sized bowl. Whisk ingredients for 30 seconds.

  2. In a large bowl, toss together the arugula, onion, cranberries, and almonds.

  3. Before serving, add vinaigrette to salad!
