Simple Arugula Cranberry Salad with Almonds
This arugula salad, with sweet dried cranberries, red onions, and sliced almonds is a beautiful addition to your holiday table! It is colorful, flavorful, and best of all, low in calories, and high in nutrients!
Ingredients:
Bag of fresh baby arugula
1 medium red onion, sliced thin
½ cup dried cranberries
½ slivered almonds
Vinaigrette
½ cup of olive oil
1 tablespoon of fresh lemon juice
1 teaspoon of salt
1 teaspoon black pepper
Instructions:
Make vinaigrette by combining olive oil, lemon juice, salt, and pepper in a medium sized bowl. Whisk ingredients for 30 seconds.
In a large bowl, toss together the arugula, onion, cranberries, and almonds.
Before serving, add vinaigrette to salad!
