Soft & Chewy Cranberry White Chocolate Chip Cookies

These cookies are inspired by a treat that my older sister bakes every holiday season! The sweetness of the white chocolate offsets the subtle tart flavor of the dried cranberries. These cookies are festive–and they disappear quickly–you may want to double the recipe!

Ingredients

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 cup dried cranberries, chopped
  • ¾ cup white chocolate chips

Directions

  1. Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper. 

2. In a medium bowl, cream the butter and both sugars together until smooth with a hand mixer. 

3. Add the vanilla and egg, mixing well. 

4. Sift together the flour and baking soda. 

5. Stir the flour mixture gradually into the creamed sugar mixture.

6. Stir in the cranberries and white chocolate chips.

 Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, about 2 inches apart. 

Bake for 12-15 minutes, until lightly golden on top.

Cool on the sheet for 5 minutes, and then transfer to a wire rack to cool completely.
