The Best Minestrone Soup

 
 
 

Minestrone soup is a hearty and classic Italian soup, made with tomatoes, vegetables, beans, and pasta. This recipe is packed with protein and nutrients-and is filling and delicious!

Ingredients:

  • 2 tablespoons olive oil

  • 1 yellow onion, finely chopped

  • 1 cup carrots (sliced)

  • 1 cup celery (sliced)

  • 1 zucchini, peeled and chopped

  • 1 can (28 oz) petite diced tomatoes

  • 1 can (15 oz) kidney beans (rinse and drain)

  • 1 can (15 oz) tomato sauce

  • 1 carton (32 oz) of vegetable broth

  • 1 tablespoon dried basil

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1 cup baby spinach leaves

  • 1 ½ cups macaroni pasta (dry)

Instructions:

  1. Heat olive oil over medium-high heat in a large pot. Add the onion, carrots, celery, and zucchini

  2. Let cook for 10 minutes, stirring occasionally.

  3. To the pot, add the diced tomatoes, beans, tomato sauce, vegetable broth, basil, salt, and pepper. Stir.

  4. Bring the mixture to a low boil. After it begins to boil, turn down the heat and let simmer, uncovered, for 15 minutes.

  5. Add the spinach and dried macaroni pasta. Cook for ten more minutes.
