Simple Spaghetti with Fresh Tomato and Basil

This simple, classic Italian dish is a hit no matter what time of year!

Ingredients

  • 2 cloves garlic
  • 1 container cherry tomatoes
  • 3 basil leaves
  • 3 teaspoons olive oil
  • 1 box spaghetti
  • ½ cup vegetable broth
  • ½ cup parmesan cheese
  • ½ cup ricotta cheese
  • salt + pepper to taste

Instructions

  • Bring a large pot of salted water to a boil.
  • Peel and mince garlic. Cut cherry tomatoes in half.
  • Combine 1 teaspoon of olive oil, salt, and pepper.
  • Remove basil leaves from stem, chop leaves.
  • Add spaghetti to boiling water and cook according to spaghetti package directions. Drain spaghetti.
  • Heat two teaspoons of olive oil in a pan.  Add garlic and stir/cook for two minutes. Season with salt and pepper.
  • Add vegetable broth, ½ cup of water, and bring mixture to a simmer.
  • Stir in cherry tomatoes into sauce.  Add ¼ cup of parmesan cheese, mix to combine.  
  • Add basil and season with salt and pepper, turn off flame.
  • Prepare dish by putting spaghetti on dish, top with parmesan cheese (and optionally, with ricotta).
