Easy Blueberry Lemon Overnight Oats

Overnight oats are easy to prepare, the texture is hearty and creamy, and they taste like pudding.

Ingredients

  • ½ cup fresh frozen blueberries, whole, or fresh blueberries, mashed 
  • 1 cup oatmeal
  • cup unsweetened almond milk
  • cup vanilla yogurt  
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 teaspoon lemon zest (+more for topping!)
  • pinch of salt

Instructions

  • Use a fork to mash the blueberries in a large bowl. (If using frozen blueberries instead of fresh blueberries, simply add them to a large bowl).
  • Add in oatmeal, almond milk, yogurt, vanilla extract, honey, lemon zest, and mix again.
  • Transfer to a container (mason jar, bowl, mug, etc.)  and cover.  Refrigerate for at least two hours, or overnight.
  • Serve cold or heat in microwave or in small saucepan if you prefer to eat them warm!
