The Best Simple Potato Soup

The delicious combination of potato and scallions in this hearty soup results in the perfect “comfort food” dish.

Ingredients

  • 4 scallions, cleaned and thinly sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 1 teaspoon salt 
  • 6 cups vegetable broth
  • 1 pound red potatoes, peeled and cubed
  • 2 pounds Russet potatoes, peeled and cubed
  • ½ teaspoon ground pepper

Instructions

  • Heat olive oil in a large pot. Cook scallions for 5-6 minutes, stirring occasionally. Stir in garlic and salt.
  • Reduce heat to low and cook for four minutes, stirring occasionally.
  • Add broth, red potatoes, and russet potatoes.  Raise heat to high and bring mixture to a simmer. Stir once, then cover and reduce to medium heat.
  • Cook soup for 25-30 minutes, until soup thickens. Stir in pepper.
  • Serve and enjoy!
