The Best Minestrone Soup

Minestrone soup is a hearty and classic Italian soup, made with tomatoes, vegetables, beans, and pasta.

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, finely chopped
  • 1 cup carrots (sliced)
  • 1 cup celery (sliced) 
  • 1 zucchini, peeled and chopped
  • 1 can (28 oz) petite diced tomatoes 
  • 1 can (15 oz) kidney beans  (rinse and drain)
  • 1 can (15 oz) tomato sauce
  • 1 carton (32 oz) vegetable broth
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup baby spinach leaves
  • cups macaroni pasta (dry)

Instructions

  • Heat olive oil over medium-high heat in a large pot. Add the onion, carrots, celery, and zucchini
  • Let cook for 10 minutes, stirring occasionally.
  • To the pot, add the diced tomatoes, beans, tomato sauce, vegetable broth, basil, salt, and pepper. Stir.
  • Bring the mixture to a low boil. After it begins to boil, turn down the heat and let simmer, uncovered, for 15 minutes.
  • Add the spinach and dried macaroni pasta. Cook for ten more minutes.
