Easy Blueberry Lemon Overnight Oats
Overnight oats are easy to prepare, the texture is hearty and creamy, and they taste like pudding. These blueberry lemon oats are tangy yet sweet, and they’re packed with protein. The combination of blueberry and lemon reminds me of summertime-yet you can prepare and enjoy these oats any time of year!
DIRECTIONS
- ½ cup fresh frozen blueberries, whole, or fresh blueberries, mashed
- 1 cup of oatmeal
- 2/3 cup of unsweetened almond milk
- 1/3 cup of vanilla yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 teaspoon lemon zest (+more for topping!)
- pinch of salt
DIRECTIONS
- Use a fork to mash the blueberries in a large bowl. (If using frozen blueberries instead of fresh blueberries, simply add them to a large bowl).
- Add in oatmeal, almond milk, yogurt, vanilla extract, honey, lemon zest, and mix again.
- Transfer to a container (mason jar, bowl, mug, etc.) and cover. Refrigerate for at least two hours, or overnight.
- Serve cold or heat in microwave or in small saucepan if you prefer to eat them warm!
