The Best Pasta Primavera Salad
This pasta salad isn’t just to be served during spring and summer-you can enjoy it year round! One thing I love about this pasta salad is that is versatile–you can add a variety of vegetables to it. This pasta salad is perfect as a main meal, or served as a side dish!
Ingredients
- 1 package (12 ounces) tricolor rotini pasta
- 4 cups fresh broccoli florets
- 1 package frozen spinach
- 1 pint grape tomatoes, halved
- 1 cup of Italian salad dressing
- Optional: low-fat mozzarella, cubed
- Cook pasta according to package directions, and add the broccoli during the last 2 minutes of cooking. Drain and rinse in cold water.
- Cook frozen spinach according to the package. Rinse with cold water and drain.
- Transfer pasta to a large bowl.
- Add the spinach, stir to combine.
- Add tomatoes, broccoli, salt and pepper. If using mozzarella, add to pasta.
- Drizzle with salad dressing; toss to coat.
- Chill until serving.
