Classic Homemade Apple Pie

About twenty years ago, I lived in Vail, Colorado, and spent my first Thanksgiving away from family. Two of my roommates were chefs, and we always ate freshly prepared bread and desserts. The first time I made an apple pie was along side those chefs, in Vail, Thanksgiving of 1998.

Here is an adaptation of the recipe….enjoy it alone, or “a la mode” with vanilla bean ice cream! (This year, my daughter helped to prepare the pie…I love the conversations that happen incidentally when we spend time together in the kitchen!)

Ingredients:

  • 1/2 cup of Wondra flour
  • Eight Granny Smith apples
  • 1 cup of sugar
  • Teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 4 tbsp. of butter
  • Pillsbury All-Ready crust
  • Cinnamon sugar
  1. Preheat oven to 400 degrees.
  2. Remove pie crust from refrigerator.
  3. Sprinkle Wondra flour in pie pan (to cover bottom of the pan).
  4. Peel, core, and cut apples.
  5. Place apples in a large bowl, and add Wondra flour. Mix to combine.
  6. In a medium sized bowl, combine sugar, cinnamon, salt, and nutmeg.
  7. Add sugar mixture to apples. Mix to combine.
  8. Place apple mixture in pie crust.
  9. Cut up butter and place over apple mixture.
  10. Cover with remaining pie crust.
  11. Spray pie crust with Pam and sprinkle cinnamon sugar on pie crust.
  12. Cover edges of pie with aluminum foil or with pie crust protector.
  13. Reduce oven temperature to 325 degrees.
  14. Bake for forty-five minutes, remove pie crust protector (or foil), and bake for an additional fifteen minutes.
