Quick and Easy Buttery Brown Sugar Shortbread

This cookie recipe is quick and easy–and you most likely already have the ingredients in your cabinets! These shortbread are delicate, buttery, and delicious.

  • 1 cup salted butter (room temperature)
  • ½ cup brown sugar 
  • 2 ½ cup all-purpose flour

  • ¼ cup of brown sugar (for rolling dough)

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, combine the butter and the 1/2 cup of brown sugar, and beat with a hand mixer until light and fluffy.
  3. Add the flour and mix on low until just combined. 
  4. Put the mixture on a clean surface, and roll the dough into a ball. 
  5. Next, roll the dough into a 12-inch log shape. 
  6. Spread ¼ cup of brown sugar on the parchment or wax paper. Roll the log of dough through the brown sugar until the dough is covered.
  7. Wrap dough in saran wrap and place dough in the refrigerator for an hour.
  8. When ready to bake, slice the dough into half inch slices.  Place on a cookie sheet lined with parchment paper.
  9. Bake for 14-19 minutes –until edges of cookies are golden.
