The Best Chocolate Chip Walnut Banana Muffins

Lately, for some odd reason, the texture of bananas is grossing me out (how old am I?!) Bananas are an excellent source of potassium, so I wanted to create a recipe that allows me to use our bananas rather than waste them. The good news about these muffins is that they are made with bananas (obv), but the flavor isn’t overpowering. Have them for breakfast, a snack, or even for a post-dinner treat!

Ingredients

2 cups all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

3 overripe bananas

1 cup of light brown sugar

1 1/2 sticks (3/4 cup) salted butter, melted and cooled

2 eggs

1 teaspoon pure vanilla extract

1/2 cup walnuts, chopped

½ cup of semi-sweet chocolate chips

  1. Preheat oven to 375 degrees F and line muffin tin with muffin liners (or lightly butter the muffin tins) .
  2. In a large bowl, combine the flour, baking soda, and salt– set aside.
  3. In a small bowl, mash two of the bananas with a fork (be sure that the bananas still have texture). 
  4. Place the remaining one banana in a bowl, add sugar to the bowl, and use a handheld mixer to whip the banana and sugar together for three minutes.               
  5. Add the melted butter, eggs, and vanilla to the banana/sugar mixture and beat well.
  6. Mix in the dry ingredients into the banana/sugar/butter/eggs/vanilla mixture.
  7. Fold in the walnuts, the chocolate chips, and the mashed bananas into the mixture with a rubber spatula.
  8. Spoon the batter to fill half of each of the spaces in the muffin tins.
  9. Bake for 18-20 minutes.  Enjoy!
