Chocolate Chip Walnut Banana Muffins

Ingredients

  • 2 cups all-purpose flour
  • teaspoons baking soda
  • ½ teaspoon salt
  • 3 overripe bananas
  • 1 cup light brown sugar
  • ¾ cup (1½ sticks) salted butter melted and cooled
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup walnuts chopped
  • ½ cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 375 degrees F and line muffin tin with muffin liners (or lightly butter the muffin tins) .
  • In a large bowl, combine the flour, baking soda, and salt– set aside.
  • In a small bowl, mash two of the bananas with a fork (be sure that the bananas still have texture).
  • Place the remaining one banana in a bowl, add sugar to the bowl, and use a handheld mixer to whip the banana and sugar together for three minutes. 
  • Add the melted butter, eggs, and vanilla to the banana/sugar mixture and beat well.
  • Mix in the dry ingredients into the banana/sugar/butter/eggs/vanilla mixture.
  • Fold in the walnuts, the chocolate chips, and the mashed bananas into the mixture with a rubber spatula.
  • Spoon the batter to fill half of each of the spaces in the muffin tins.
  • Bake for 18-20 minutes.
