No for real, these are the best gingerbread cookies you will ever bake. Am I the Queen of superlatives? Nah, just a truth teller! These cookies offer a taste of ginger that is not overpowering, just delicious. You can roll out the dough and cut out shapes, or prepare these as classic circle cookies-with crunchy edges and a soft, chewy middle.

INGREDIENTS

  • 3/4 cup salted butter, softened
  • 1 cup sugar
  • 1 large egg, room temperature
  • 1/4 cup molasses
  • 2-1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • sugar

DIRECTIONS

Preheat oven to 350 degrees.

  1.  In a large bowl, using an electric mixer, cream butter and sugar until light and fluffy.
  2.  Beat in egg and molasses. 
  3. In a medium bowl, combine the flour, ginger, baking soda, cinnamon, cloves and salt.
  4.  Gradually add the flour mixture to the creamed mixture and mix well. 

  5. Roll into 1-1/2-in. balls.  Pour sugar on a plate or work surface, and roll dough balls in the sugar. 
  6. Place dough balls 2 in. apart on ungreased baking sheets. 
  7. Bake at 350° 10-12 minutes until lightly browned.
  8. Transfer to wire racks to cool.
