The Best Gingerbread Cookies

These cookies offer a taste of ginger that is not overpowering, just delicious.

Ingredients

  • ¾ cup salted butter, softened
  • 1 cup sugar
  • 1 large egg, room temperature
  • ¼ cup molasses
  • cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • sugar

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, using an electric mixer, cream butter and sugar until light and fluffy.
  • Beat in egg and molasses. 
  • In a medium bowl, combine the flour, ginger, baking soda, cinnamon, cloves and salt.
  • Gradually add the flour mixture to the creamed mixture and mix well. 

  • Roll into 1½ in. balls.  Pour sugar on a plate or work surface, and roll dough balls in the sugar. 
  • Place dough balls 2 in. apart on ungreased baking sheets. 
  • Bake at 350° 10-12 minutes until lightly browned.
  • Transfer to wire racks to cool.
