The Best Pasta Primavera Salad

This pasta salad isn’t just to be served during spring and summer-you can enjoy it year round! One thing I love about this pasta salad is that is versatile–you can add a variety of vegetables to it. This pasta salad is perfect as a main meal, or served as a side dish!

Ingredients

  • 1 package (12 ounces) tricolor rotini pasta
  • 4 cups fresh broccoli florets
  • 1 package frozen spinach
  • 1 pint grape tomatoes, halved
  • 1 cup of  Italian salad dressing 
  •  Optional: low-fat mozzarella, cubed
  •   Cook pasta according to package directions, and add the broccoli during the last 2 minutes of cooking. Drain and rinse in cold water.
  •  Cook frozen spinach according to the package.  Rinse with cold water and drain.
  • Transfer pasta to a large bowl. 
  • Add the spinach, stir to combine.
  • Add tomatoes, broccoli, salt and pepper. If using mozzarella, add to pasta.
  • Drizzle with salad dressing; toss to coat. 
  •  Chill until serving.
