Chocolate Chip Pumpkin Pancakes
It sometimes feels like the holiday season starts once Halloween ends, but let’s not forget that Autumn doesn’t end until December–which gives time to enjoy all things pumpkin-now or any time of year!
These chocolate chip pumpkin pancakes are light, fluffy, and pure perfection on a plate!
INGREDIENTS
- 3 cups of flour
- 3 Tablespoons sugar
- 2 teaspoons baking soda
- 3 Tablespoons baking powder
- 1 teaspoon salt
- 2 cups water
- 1 15 ounce can pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup chocolate chips
- maple syrup (optional)
INSTRUCTIONS
Heat pan/griddle
- In a large mixing bowl, whisk together flour, sugar, baking soda, baking powder, salt, sugar, water, pumpkin, vanilla, cinnamon and nutmeg until well combined.
- Fold in chocolate chips.
- Pour batter onto hot griddle and cook for a few minutes on each side until golden brown and cooked through.
- Serve with maple syrup, if desired.
